One of the distinguishing features of this whisky is the use of the heritage Chevallier barley, an ancient variety that dates back to the 1820s. Though more costly to cultivate, Chevallier is revered for its rich, biscuity, and malty flavour profile, bestowing the whisky with remarkable depth and complexity. Crucially used during fermentation is a special heritage yeast, a culture that dates back over 100 years to pre WW1, and a closely guarded secret. Selected for its significant influence over the whisky's character, this yeast variety undergoes an extended fermentation process, converting the sugars from the barley into alcohol, while simultaneously producing valuable flavour compounds. These compounds impart fruitiness, floral notes, and complexity to the whisky, even before distillation. As a result, this reserve exhibits delightful profiles of banana, pear, raisins, apple, and tropical fruits, complemented by spicy and nutty undertones.
